I have been so fortunate to have travelled a bit in 2014 and was introduced to so many new and wonderful dishes. I promised myself that I would return back home to South Africa, and give these new dishes, at least “new” to my tastebuds 😉 , a try out. My blog is a celebration…it’s all about feasting, celebrations and fun…there are some recipes too…but it’s also about my love for food and celebrating that love! To celebrate joining the Mela team, I decided to give away one of my kitchen must have appliances…A Stand Mixer! And over the past few weeks with all the cooking and baking going on, I have fallen in love with this appliance over and over again!

Chai Spice Cupcakes

Chai spice cupcakes (Recipe Shared on by Sajida Jogiat of Watalotwegot 1)

½ lb butter soft

1 1/3 cup sugar.

3 cups flour.

6 tsp baking pd.

4 jumbo eggs.

1 tsp cinnamon pd.

½ tsp mixed spice.

½ tsp ginger pd.                                            ¾ tsp elachi pd.

1 tsp vanilla ess.

Take 1 cup milk and boil it with.

5 tsp tea leaves set aside and cool.              It should be ¾ cup when its done.

Use ½ cup in the cupcakes and

¼ cup in the icing.

Beat all ingredients together till light and fluffy. Scoop into 36 paper cups and bake @ 180 till done.

Cool and ice.

Icing:

½ lb butter – soft.

2 ½ cups icing sugar.

Beat well

¼ cup milk (from above) boiled till frothy.  Add in a drizzle.                                                 1 tsp cinnamon.

½ tsp vanilla

¼ tsp elachi

¼ tsp ginger pd.                                          Adjust to ur taste

*personal note :I used 3 five roses tea bags instead of tea leaves (Sajida Jogiat of Watalotwegot 1)
